Alfredo Spaghetti Pasta with Jammy Leek & Zucchini

This homemade Alfredo sauce is made with simple ingredients — butter, Parmesan cheese, garlic, cream, and salt. It's a pasta sauce that's beyond easy to make, elevated to a whole new level with the addition of jammy leeks and zucchini.

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 large leek, very thinly chopped
  • 1 large zucchini, grated
  • 1 tsp salt
  • 340g spaghetti pasta (or any pasta you prefer)
  • 6 tbsp butter
  • 2 garlic cloves, minced or 1 tsp Grange Garlic 
  • 1 1/2 cups thickened cream
  • 1/4 tsp salt
  • 1 1/4 cups grated Parmesan cheese
  • 1/4 tsp pepper
  • 2 tbsp flat-leaf parsley (optional)

 

Instructions

  1. In a large stovetop pan, add the olive oil and butter and bring up to medium heat. Add the leek, zucchini, and salt, stir. Cover and cook for about 15–20 minutes, stirring every couple of minutes or so until the leeks have broken down and become caramelized. Smash the leeks & zucchini as they cook with the back of a wooden spoon to help them break down. *If they look dry as they cook, add a tbsp of water or so as needed. Remove from the pan into a bowl and set aside.
  2. In a large pot, heat water over high heat until boiling. Add salt to season the water. Once it is boiling, add spaghetti and cook according to package instructions. NOTE: Save some pasta water. The pasta water is full of flavor and can be used to thin out the sauce if needed.
  3. In the same pan you cooked the leeks in, heat butter over medium heat. Add garlic and cook for 1 to 2 minutes. Stir in cream.
  4. Let the cream come up to a simmer and reduce the heat so it does not boil, and cook for 5 to 8 minutes. Add the grated Parmesan cheese to the sauce and stir well until smooth.
  5. Add the jammy leeks & zucchini and stir through the sauce until it is evenly dispersed.
  6. Toss Alfredo sauce with spaghetti pasta. Add a little pasta water if it needs to be thinned out.
  7. Once it is ready, garnish with extra Parmesan cheese & Italian parsley, if desired.
