Baked Prawn, Chorizo & Feta

Ingredients
- 2 tbsp extra virgin olive oil
- 1 onion, diced
- 2 garlic cloves, sliced
- 2 chorizo sausages, sliced
- 150ml dry white wine
- 400g (1 can) diced tomatoes
- 3 sprigs fresh oregano
- 1 pinch caster sugar
- 300g King prawns, shelled (fresh or frozen)
- 100g feta cheese, crumbled
Instructions
- Preheat the oven to 200°C (gas mark 6). Heat 1 tbsp of olive oil in an oven-proof deep-sided frying pan or skillet.
- Add the diced onion and fry for 4 minutes until softened. Then, add the sliced garlic and fry for an additional 2 minutes.
- Incorporate the sliced chorizo into the pan and fry for another 4 minutes until it releases its flavours.
- Pour in the white wine and simmer for 2 minutes, allowing the alcohol to evaporate. Next, add the diced tomatoes, fresh oregano, and a pinch of caster sugar. Simmer for 6-8 minutes to allow the flavours to combine.
- Turn off the heat and gently stir the defrosted prawns into the sauce until they are evenly distributed. Scatter the crumbled feta over the top, drizzle with the remaining 1 tbsp of olive oil, and season with salt and pepper.
- Transfer the pan to the preheated oven and bake for 8-10 minutes, or until the prawns are fully cooked and turn pink throughout.
- Allow the dish to cool for 5 minutes before serving to let the flavours settle. Enjoy!
Hints & tips
- Prawns, whether fresh or frozen, can be used. If using frozen prawns, defrost them according to the packet instructions before adding them to the dish.
