Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 onion, diced
  • 2 garlic cloves, sliced
  • 2 chorizo sausages, sliced
  • 150ml dry white wine
  • 400g (1 can) diced tomatoes
  • 3 sprigs fresh oregano
  • 1 pinch caster sugar
  • 300g King prawns, shelled (fresh or frozen)
  • 100g feta cheese, crumbled

Instructions

  1. Preheat the oven to 200°C (gas mark 6). Heat 1 tbsp of olive oil in an oven-proof deep-sided frying pan or skillet.
  2. Add the diced onion and fry for 4 minutes until softened. Then, add the sliced garlic and fry for an additional 2 minutes.
  3. Incorporate the sliced chorizo into the pan and fry for another 4 minutes until it releases its flavours.
  4. Pour in the white wine and simmer for 2 minutes, allowing the alcohol to evaporate. Next, add the diced tomatoes, fresh oregano, and a pinch of caster sugar. Simmer for 6-8 minutes to allow the flavours to combine.
  5. Turn off the heat and gently stir the defrosted prawns into the sauce until they are evenly distributed. Scatter the crumbled feta over the top, drizzle with the remaining 1 tbsp of olive oil, and season with salt and pepper.
  6. Transfer the pan to the preheated oven and bake for 8-10 minutes, or until the prawns are fully cooked and turn pink throughout.
  7. Allow the dish to cool for 5 minutes before serving to let the flavours settle. Enjoy!
