
Burger Bites
Looking for a fun twist on burger night? These cheesy, juicy Burger Bites are the perfect handheld treat! Packed with flavour and stuffed with gooey cheese, they’re great served with sweet potato fries, potato wedges, and a fresh salad. Or, for something extra fun, try making Burger Bite subs!

Ingredients
- 450g lean beef mince
- 1 large egg, lightly beaten
- ½ cup seasoned breadcrumbs (or substitute gluten-free crumbs or almond meal)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp pepper
- 1 tbsp tomato paste
- 20 cubes of cheese, about 1cm in size
- 1 tbsp olive oil
- 100g additional grated cheese (optional, for topping)
Burger Bite Sauce
- ½ cup mayonnaise
- 1 tbsp tomato sauce
- 1 tbsp American mustard
- 2 tbsp chopped pickles (more can be added to taste)
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Pinch of salt and pepper
- 1 tbsp fresh dill (optional)
Instructions
- Preheat the oven to 180c fan or set the air fryer to 180c.
- In a large bowl, combine the beef mince, egg, breadcrumbs, garlic powder, smoked paprika, onion powder, salt, pepper, and tomato paste. Mix until just combined. Do not overmix!
- Form the mixture into 20 meatballs, about 1.5 to 2 inches in size (roughly the size of a golf ball).
- Press a cube of cheese into the center of each meatball, sealing the mince around it to enclose the cheese. Repeat with the remaining meatballs.
- For the oven: Heat the olive oil in a large oven-safe skillet/ fry pan over medium heat. Add the meatballs in a single layer and brown on all sides, cooking for about 5 minutes total. Drain any excess grease if needed. Transfer the skillet/ fry pan to the oven and bake for 10 minutes.
- For the air fryer: Skip the skillet and place the meatballs in the air fryer basket in a single layer. Air fry at 180c for 8–10 minutes.
- Optional: Sprinkle 100g of extra grated cheese over the meatballs after baking or air frying. Return to the oven or air fryer for 1–2 minutes until the cheese melts.
- While the meatballs cook, prepare the special sauce by blending all sauce ingredients in a blender or NutriBullet until smooth. Transfer to a bowl for serving.
- Serve the Burger Bites with lettuce, cherry tomatoes, pickled onions, pickles, and the special sauce with your favourite fries or bread rolls.
