Crunchy Chicken Burger

Ingredients
- 2-3 large chicken breasts
- 1 cup flour
- ½ tsp garlic powder
- Salt and pepper
- 1 cup milk
- 2 cups corn chips
- 1 cup panko breadcrumbs
- Oil for frying
- 2 cups green cabbage, finely shredded
- 2 cups iceberg lettuce, finely shredded
- 4-6 bread rolls
- Chip dip mayo
Instructions
- Trim the chicken breasts and slice each one widthwise to create two thinner pieces. Depending on their size, slice again to make smaller portions if necessary.
- Crush the corn chips into large crumbs about the same size as the panko crumbs. Mix the corn chip crumbs and panko breadcrumbs in a bowl.
- In a separate bowl, combine the flour, garlic powder, salt, and pepper. Place the milk in another bowl.
- Dip each piece of chicken into the flour mixture, followed by the milk, and then coat thoroughly with the corn chip and breadcrumb mixture. Repeat for all pieces of chicken.
- Heat oil in a frying pan over medium-high heat. Fry each chicken piece for 4 minutes per side or until golden and cooked through. Remove and place on a wire rack to drain excess oil. To keep cooked chicken warm, preheat the oven to 150°C and place finished pieces in the oven while frying the remaining chicken.
- Wash the cabbage and lettuce, then finely shred. Mix them together in a bowl.
- Slice the bread rolls in half and butter the bottom half. Generously spread chip dip mayo on the top half and press a handful of the cabbage and lettuce mixture onto it.
- Place a piece of cooked chicken on the buttered bottom half of each roll. Close with the top half and repeat for all rolls. Serve immediately.

- Gluten-Free Option: Swap the flour and breadcrumbs for your favorite gluten-free alternatives and use a brioche-style gluten-free bread roll.
- Air Fryer Method: Preheat the air fryer to 200°C and spray the basket with olive oil spray. Place the breaded chicken in a single layer, ensuring there's space between pieces, and spray them lightly with cooking spray. You may need to cook in batches. Cook for 6-7 minutes, carefully flip the chicken, spray the other side, and cook for another 4-5 minutes, or until the internal temperature reaches 74°C.
