Garlic Bread Meatball Subs

Ingredients
Meatballs
- 500g beef mince
- 2 tsp Grange Garlic or 2 garlic cloves, minced
- 2 tbsp Pizza Pizzaz Seasoning
- 1 egg
- ¼ cup breadcrumbs
- 1/3 cup finely grated parmesan
- Salt & pepper
Sauce
- 500ml passata
- 1 tbsp Pizza Pizzaz Seasoning
- 1 tsp Grange Garlic or 1 garlic clove, minced
- ½ tsp chilli flakes (optional)
Subs
- 2 pack bake-at-home baguettes or equivalent
- 8 tbsp butter, softened
- 2 tsp Grange Garlic or 1 garlic clove, minced
- 2-3 cups shredded mozzarella
- Fresh basil
Instructions
- Preheat the oven and cook your baguettes as per packet instructions. Leave to cool while you prepare the meatballs.
- In a bowl, mix the mince, garlic, Pizza Pizzaz seasoning, egg, breadcrumbs, parmesan, and ¼ tsp each of salt and pepper.
- Using damp hands, roll the mixture into 20 small meatballs and place them on a plate.
- Heat 2 tbsp olive oil in a large frypan over medium/high heat. Add the meatballs and gently fry for 8-10 minutes until browned all over.
- In a bowl, mix together the passata, seasoning, and garlic, then pour over the meatballs. Reduce the heat to medium-low and simmer for 5-8 minutes until the sauce has thickened a little. Add a little water if it thickens too quickly.
- While the meatballs are simmering, slice the baguettes in half. Mix the butter and garlic together and thickly spread over each side.
- Top the baguettes with the meatballs and sauce, then sprinkle generously with shredded mozzarella.
- Place on a baking tray and bake in the oven for 5-7 minutes until the cheese has melted and is golden.
- Remove from the oven and leave to stand for 5 minutes before slicing into smaller pieces. Sprinkle with fresh chopped basil and serve.
Hints & Tips
- Gluten-free alternative: Use gluten-free pre-made garlic bread, defrost it, and break the slices up into individual pieces on a baking tray. Top with a meatball or two and then the cheese. Bake in the oven until the bread is crispy and the cheese has melted.
- Swap the beef mince for pork mince for a different flavor profile.
- Serve these garlic bread meatball subs with a salad on the side.
- Store leftovers in the fridge for up to 2 days. Meatballs are suitable for freezing to use at a later date.
