Laksa Beef Mince Noodles

Enjoy a flavourful and hearty meal with these easy-to-make Laska Beef Mince Noodles, perfect for a quick weeknight dinner.

Ingredients

  • 500g beef mince
  • 1 tbsp coconut oil
  • 3 tbsp Laksa seasoning
  • 1 tbsp ginger
  • 1 tbsp fish sauce
  • 1 can coconut cream
  • 200g mushrooms, sliced
  • 1 large carrot, grated
  • 1 bunch pak choy, roughly chopped
  • Fresh coriander
  • Spring onion slices – for serving
  • Lime wedges for serving

Instructions

1. In a large fry pan, heat the coconut oil on medium/high heat. Add the mince, ginger, Laksa seasoning, and fish sauce. Cook until the mince has some colour and is fragrant from the spices.
2. Add the mushrooms and continue to fry for another 3-4 minutes. Pour in the coconut cream and stir to combine.
3. Add the grated carrot and pak choy, reduce the heat to medium/low, and leave to simmer for 5-7 minutes until the veggies have cooked and the sauce is rich and thick.
4. In the meantime, cook the rice noodles as per the pack instructions. Drain and toss through the Laska beef mince. Serve immediately in bowls topped with fresh coriander, diced spring onion and lime wedges.



Hints & tips

  • Egg noodles are a good alternative to rice noodles or if you have no noodles to hand, rice would be a good swap.
  • Store in the fridge for 3 days.
  • Beef mince mixture is suitable for freezing before the noodles are added. Defrost & reheat before tossing through cooked noodles.
