Prosciutto-Wrapped Grilled Nectarines

A simple yet impressive nibble that's both sweet and salty. These prosciutto-wrapped grilled nectarines are perfect for sharing with friends over a chilled glass of wine.

Ingredients

  • 8 slices of prosciutto
  • 2 nectarines (firm ones are best)
  • Cracked black pepper
  • 1 tbsp olive oil
  • Raspberry & Balsamic Vinaigrette
  • Chopped basil leaves

Instructions

  1. Slice each piece of prosciutto in half lengthways. Most slices will naturally separate into two thinner pieces.
  2. Cut the nectarines in half, remove the stone, and slice each half into 4 wedges. Lightly brush each piece with olive oil.
  3. Preheat a grill or grill pan over medium-high heat. Grill the nectarines for 2–3 minutes on each side, just until you see those lovely grill marks and they soften slightly. Let them cool.
  4. Lay a slice of prosciutto flat, place a nectarine slice on one end, season with cracked black pepper, and roll it up. Secure it with a toothpick or mini skewer.
  5. Arrange them on a platter, drizzle with raspberry balsamic vinaigrette, and sprinkle with chopped basil. Serve and enjoy.
