Prosciutto-Wrapped Grilled Nectarines

Ingredients
- 8 slices of prosciutto
- 2 nectarines (firm ones are best)
- Cracked black pepper
- 1 tbsp olive oil
- Raspberry & Balsamic Vinaigrette
- Chopped basil leaves
Instructions
- Slice each piece of prosciutto in half lengthways. Most slices will naturally separate into two thinner pieces.
- Cut the nectarines in half, remove the stone, and slice each half into 4 wedges. Lightly brush each piece with olive oil.
- Preheat a grill or grill pan over medium-high heat. Grill the nectarines for 2–3 minutes on each side, just until you see those lovely grill marks and they soften slightly. Let them cool.
- Lay a slice of prosciutto flat, place a nectarine slice on one end, season with cracked black pepper, and roll it up. Secure it with a toothpick or mini skewer.
- Arrange them on a platter, drizzle with raspberry balsamic vinaigrette, and sprinkle with chopped basil. Serve and enjoy.
