Vanilla Birthday Cake

This vanilla birthday cake is the perfect go-to for any celebration. Whether you're making cupcakes or a larger cake, it’s versatile and easy to double if needed. Moist and fluffy, it’s a classic recipe you'll turn to again and again!

Ingredients

  • 175g butter
  • 175g caster sugar
  • 3 eggs (room temperature)
  • 220g self-raising flour
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 100ml sour cream

Instructions

  1. Preheat your oven to 180°C (160°C fan) and line a 9-inch (23cm) cake tin with baking paper.
  2. Cream the butter and caster sugar together in a mixer until light and fluffy, about 2 minutes.
  3. Gradually add the eggs, one at a time, mixing well after each addition. Don’t worry if the batter looks a bit split after the third egg—it’ll come together.
  4. Slowly mix in half the self-raising flour and baking powder until just combined, then add the rest and mix again until smooth.
  5. Stir in the sour cream and vanilla extract, then beat the batter on medium-high speed for about a minute.
  6. Pour the mixture into your prepared tin, then tap the tin gently on the counter to release any air bubbles.
  7. Bake for 40-45 minutes or until a skewer comes out clean.
