Vanilla Birthday Cake

Ingredients
- 175g butter
- 175g caster sugar
- 3 eggs (room temperature)
- 220g self-raising flour
- 1 tsp baking powder
- 2 tsp vanilla extract
- 100ml sour cream
Instructions
- Preheat your oven to 180°C (160°C fan) and line a 9-inch (23cm) cake tin with baking paper.
- Cream the butter and caster sugar together in a mixer until light and fluffy, about 2 minutes.
- Gradually add the eggs, one at a time, mixing well after each addition. Don’t worry if the batter looks a bit split after the third egg—it’ll come together.
- Slowly mix in half the self-raising flour and baking powder until just combined, then add the rest and mix again until smooth.
- Stir in the sour cream and vanilla extract, then beat the batter on medium-high speed for about a minute.
- Pour the mixture into your prepared tin, then tap the tin gently on the counter to release any air bubbles.
- Bake for 40-45 minutes or until a skewer comes out clean.
