Watermelon with Feta & Raspberry Balsamic

Ingredients
- ¼ watermelon
- 100g feta, crumbled
- Raspberry balsamic
- Fresh basil
- Fresh mint
- Good quality olive oil
- Pinch of salt
Instructions
- Slice the watermelon into sticks or wedges, leaving the skin on for easy handling.
- Arrange the slices on a platter and crumble feta over the top.
- Drizzle generously with raspberry balsamic—about 1 tsp per slice or more if you like.
- Add a splash of olive oil and a pinch of salt.
- Sprinkle with fresh basil and mint leaves (shred them if they're large). Serve immediately.
