Watermelon with Feta & Raspberry Balsamic

This isn’t a recipe as much as it is a fresh, effortless idea. Perfect for sharing on a warm afternoon with cold drinks and a cheeseboard.

Ingredients

  • ¼ watermelon
  • 100g feta, crumbled
  • Raspberry balsamic
  • Fresh basil
  • Fresh mint
  • Good quality olive oil
  • Pinch of salt

Instructions

  1. Slice the watermelon into sticks or wedges, leaving the skin on for easy handling.
  2. Arrange the slices on a platter and crumble feta over the top.
  3. Drizzle generously with raspberry balsamic—about 1 tsp per slice or more if you like.
  4. Add a splash of olive oil and a pinch of salt.
  5. Sprinkle with fresh basil and mint leaves (shred them if they're large). Serve immediately.
